Horchata

horchataAnother famous drink in Spain in Horchata de Chufa. It originates from Valencia and is
a very common refreshment throughout Spain and other Spanish speaking countries.
The drink can be found in different variations with different recipes depending on which
country you are in.

The Horchata de chufa is a milky drink made of ground almonds, rice, barley, sesame seeds
or tigernuts (chufas in Spanish). The Chufas contain many minerals such as phosphorus and
potassium. In Latin American countries the Horchata is usually made from rice.

How is it made then? First the Chufas are soakes in water until they are soft. They are then
mashed and mixed with water or milk depending on the recipe you are using. The next step is
to flavour it with sugar, cinnamon or vanilla.

You can find the Horchata drink in cafes, supermarkets and Horchaterias. Be sure to drink it ice-cold, that is when Horchata is at its best.
